The 2l amount includes water intake from food and most water retention is from food consumption. The amount is actually from a study and really varies person to person, climate to climate. Imo, the best check is the color of your urine, a dark color means dehydration.

Coffee does hydrate you but at the same time has an anti-diuretic effect. The net gain is more water.
