I'm having a lot of conversations (video/audio/texy) with friends/colleges on discord but I'm always scared to send sensetive information there as it's on their servers.
Do you have any app that can allow us to talk (and prefarably share screens too) without their servers stuck in the middle?

You can make you own chat using webrtc. It is and to and communication without server in the middle

ICQ, whatsapp, make your own irc?

Telegram or Tox

WhatsApp is not secure

I would always recommend XMPP as it's open source and has no centralized master server. Mingled with Omemo or Otr, it is one of the safest means of communication.
However, Signal is possibly what you are looking for.

I agree with pestilent - XMPP like jabber,...

Telegram or signal are solid apps.Telegram or signal are solid apps.

Telegram/jabbar are working fine
